Wash and dry all produce. Cut potatoes into 1/2-inch-thick wedges. Zest and quarter the lemon.

In a #baking sheet{}, combine the potatoes with a healthy drizzle of @olive oil{} and half of the @fry seasoning{} (the rest you'll use now) and salt and pepper for seasoning. For 4 servings: use the entire baking sheet.
Roast on top rack for ~{10%minutes} (add green beans later).

When potatoes have roasted for 2 minutes, remove the sheet.

Toss the green beans onto the empty side of a sheet with a drizzle of olive oil, salt, and pepper. (For 4 servings, continue roasting potatoes and add green beans to a second sheet; roast on middle rack.)
Return it to the top rack and roast until the vegetables are golden and tender, 12-15 more minutes.
Toss the roasted green beans with salt, pepper, and lemon zest to taste.

## Step 4
Meanwhile, pat salmon dry with towel. Season with salt, pepper and remaining Fry seasoning.
In a large pan heat a generous amount of olive oil over medium heat. Add the salmon, skin side down, and cook until crispy and golden, 5-7 minutes. Flip and cook until the salmon is opaque and cooked through, 1-2 more minutes.
Turn off the heat; transfer the salmon to a plate. Wipe out the pan.

## Step 5
Add the honey dijon dressing, 2 tbsp water and a squeeze of lemon juice to the same pan over medium heat; simmer until thickened, 1-2 minutes.
Turn off heat and stir in 2 tbsp butter until melted. Season with salt and pepper to taste.

### Step 6
Divide salmon, potato wedges and green beans between plates. Drizzle the salmon with the sauce. Serve with the remaining lemon wedges on the side.
